Though it may just be one small project, we hope it carries momentum for developing farmers across generations. One major hurdle for coffee farmers transitioning to specialty coffee farming is finding a buyer for their new coffee quality.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eA lot of these coffees end up purchased at lower prices destined to be included in a blend. The Tomorrow Seasonal Project is designed to target standout coffees from farmers in transition and feature them as single origin releases. When we realized most of these coffees came from certified organic farms, we decided to make the project a permanently certified organic offering. \u003c\/p\u003e\n\u003cp\u003eRio Blanco Coffee Growers Association represents certified organic growers in the San Ignacio, Peru community of Namballe. These are smallholder farmers with an average of\u003cbr\u003e1-2 hectares in production. These producers operate within the buffer zone of the Tabaconas Namballe National Sanctuary, The area encompassing three river basins and protects a unique Amazonian ecosystem called the páramo including two endangered species: the spectacled bear and the highland tapir. The 30 farmer collective strived to continue producing a high level of quality and quantity but was hit with coffee leaf rust and organizational struggles for a number of years. Latin American exporter Caravela put up a cupping lab and warehouse in nearby Santa Barbara. They worked with the collective to improve leadership and quality and put the members' ideas into practice. Finally, in 2013, the first Aguacate coffees made it to the US: right in time for a brand new roastery in Ruby to receive those samples.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eWe fell in love instantly. Coffees from Aguacate have a special deep fruit sweetness, sparkling acidity, and supreme balance. The quality is the direct result of the member farmers, now 50, being attuned to the fine details of picking, processing, and drying. Aguacate is an almost magical project: tucked into a valley at extreme elevations, each farmer’s plot is managed on steep hills, and surrounded by forest. All the coffees are washed at micro wet-mills at each farm, and the only way in and out is through a steep rocky gravel trail to the main road that leads to the dry mill even further up the mountain.\u003c\/p\u003e\n\u003cp\u003eIn 2016, Jared was able to finally visit the farms and see the process in person. Aguacate was the first coffee Ruby ever purchased, and being able to connect with the producers in person was a major step towards strengthening our relationship. With a backdrop of rolling green hills, the area is planted with\u003cbr\u003ecrops like coffee trees, cassava, sweet potato, and bananas. The ridge of above the washing station has clear views down to Lake Kivu, which forms the border between Rwanda and the Democratic Republic of Congo. The elevation here results in long ripening and a late harvest, one of the latest in Rwanda’s season. The microclimate of the cloud forest at that elevation, paired with the volcanic soil, makes ideal conditions for high quality coffee production.\u003c\/p\u003e\n\u003cp\u003eAside from the beautiful scenery, Kanzu is well run and very organized. The washing station produces 4 to 6 shipping containers of coffee per year. During the harvest season, more than 535 smallholder farms bring their cherries to Kanzu. The station employs about 50 locals to process the coffee. Meticulous in their process, coffee cherry is floated and pulped, then undergoes a dry fermentation for up to 18 hours before being washed and soaked. It then is dried for 18 hours on raised beds with mesh bottoms to allow air circulation. Water from processing is reclaimed and treated to help conserve water resources for the community. \u003c\/p\u003e\n\u003cp\u003eObtaining quality coffee from Rwanda hasn’t always been easy. Founded by Jose Uribe Lasso in Bruselas, Huila, the farm has gained a dedicated following over the years. After moving to the Huila region as a picker, Jose Lasso saved enough to purchase a 1.5 hectare farm. Over the last 29 years, he and his family have grown El Diviso to 17 hectares, including 1 hectare of forest reserve.\u003c\/p\u003e\n\u003cp\u003eRuby’s relationship with Jose Uribe Lasso began in 2019 through the cooperative Losb Guacharos. After several years of sourcing from Los Guacharos, we purchased our first single-farmer lot from the group—acaturra varietal separation from Jose Uribe Lasso's Finca El Diviso. Today, Jose Uribe’s sons Nestor, Adrian, and Jhonathan are integral to El Diviso’s operations and are recognized as modern innovators in specialty coffee. Together they have developed standardized processes, continuously invested in infrastructure and high-quality varieties, and performed experimentation with precision, all driven by a commitment to quality. This is our first pink bourbon lot from El Diviso. Nearly 20% of the farm is now planted in pink bourbon, amounting to 14,000 trees.\u003c\/p\u003e\n\u003cp\u003ePink bourbon has gained notoriety for its distinctive flavor and aroma. Lasso’s precise fermentation treatments are applied to this lot, each with specific intention and flavor goals to further enhance these varietal characteristics. After rinsing and sorting the cherries, it starts with an open-air fermentation stage which enhances fruit and chocolate sweetness, followed by depulpling. A 48 hour anaerobic dry fermentation in sealed bags further enhances floral aromatics. Juices from the first fermentation stage are added back in for a 24-hr submerged ferment with the intent to add body and balance structure. A thermal shock rinse - hot and then cold - helps to seal all that good chemistry in and extend the longevity of the final product.
